Mexican maize pozolero (hominy) is dried corn, used to make pozole, a Mexican stew seasoned with colourful garnishes including lime wedges, salsa and sliced radishes. This dried corn has been soaked in an alkaline bath. It is then washed thoroughly to remove the hull and any trace of lime.
The corn retains a firm texture, great for adding to soups, stews and broths. You can also use hominy when making menudo, a traditional Mexican beef soup.
