De Buyer pastry film, also known as confectioner’s ribbon or pastry tape, is a must-have accessory for keen patissiers, bakers and confectioners. Use the polypropylene ribbon to line tart rings or dessert moulds for perfectly turned out mousses and layered entremets.
The confectioner’s ribbon is useful for eye-catching chocolate work, too. Lay a piece of the film flat and use the back of a spoon or a pastry brush to spread a ‘swoosh’ of melted chocolate onto it. Leave to set and peel it off the tape to get an artistic chocolate garnish for cakes and desserts.
