With the De Buyer inocuivre copper saucepan with stainless steel handle, you can enjoy cooking with precision, in style.Â
The inocuivre copper saucepan is made of 90% copper and 10% stainless steel. Copper on the outside provides the pan with excellent control, while the stainless steel inside eliminates the need for re-tinning.Â
Traditionally copper pans are lined with tin which wears away over time, so you would need to send your pan away to be ‘re-tinned’. Instead, De Buyer uses a very thin coating of stainless steel which is durable, will last, and is easy to clean.
A curved stainless steel handle makes the pan comfortable to hold and serve directly from. You can also buy a stainless steel lid for your pans here.
This De Buyer copper saucepan comes in three sizes:
- 14cm – a small saucepan, perfect for warming through sauces, jus and gravies.Â
- 16cm – a classic small saucepan.
- 20cm – a large saucepan.
Why copper?
Not only does copper look beautiful, but it is also fantastic to cook with:Â
- The tremendous heat conduction qualities of copper mean the pan responds almost instantly to changes in temperature. This gives great control.
- The thick base means there is extremely even heating, with no hot spots. Incredible for making caramel.
- Similarly, when it gets hot, it will stay hot!Â
Please note, this saucepan is not suitable for use on induction hobs.
Notes on Copper Cookware
Copper is a very soft metal, so it scratches easily. The bases of all pans & bowls may already have slight scratches from the final polishing process. To minimise new scratches, try not to drag the bowl across surfaces (e.g. from one part of your work surface to another). To avoid warping, do not plunge a cold bowl into very hot water or vice versa. Copper will develop a patina over time. To restore its warm glow, use a copper polishing paste from time to time. Hand wash with warm, soapy water, and use white vinegar to remove traces of oxidation and fats on the inside of the bowl.
