Make the popular creamy Lebanese dessert drink, sahlab or salep, with sahlab powder drink mix. It’s traditionally served hot with pieces of kaak – a Lebanese ‘street bread’ similar in texture to breadsticks, flavoured with mahlab and studded with sesame seeds.
Sahlab is the name of an ingredient as well as the drink itself. It’s a flour made from the tuberous roots of a species of orchid, and has a unique, almost musky aroma. When mixed with hot milk it turns exceptionally thick and creamy.
Sahlab drinks are popularly sold by street vendors and cafes across the Middle East. It is usually topped with a sprinkling of cinnamon, but other ingredients are also used to flavour the drink itself. This version is flavoured with rose, orange blossom and mastic.
Directions for use
Heat approximately 800ml of milk in a saucepan until it just starts to boil. Add the contents of one sahlab sachet and stir continuously, keeping the heat constant, until it turns thick. Look for a consistency similar to custard. As soon as it thickens, remove from the heat and transfer to serving glasses or cups. Sprinkle each cup with a little cinnamon and serve immediately.
