Camargue red rice is an unpolished, medium-grain, organic variety with a distinctive, red-coloured outer bran providing great texture and a deliciously nutty flavour. Camargue red rice is grown in the marshes of South West France, a food hot-spot, also famed for fleur de sel production.
The flavoursome red rice is great for stuff vegetables, or using as the base for a salad. Camargue red rice also makes a wonderful bed for chicken or beef or daal to be served on. To introduce new and interesting flavours, try adding a cao guo pod – Chinese black cardamom – to the pan of simmering water as the rice cooks.
Cooking Instructions
Use 1 part rice to 2 parts water. Bring to the boil and simmer gently for about 35-40 minutes. Stir occasionally to prevent sticking.
