The extra-thin noodles are made by a family of artisans in Japan, using a mixture of organic wheat and buckwheat flour. They’re made using a traditional roll-and-cut method, rather than more industrialised extrusion methods.
The slightly nutty flavour of these skinny somen noodles is ideal with noodle soups and stir fries. Simply add to boiling water and cook for 3 minutes.
