Island Sun white gari are granules made from dried cassava and it is used to in Caribbean cuisine, as well as to make eba, a staple food in Nigeria that is served alongside soups and stews.Â
Eba is made in the following way:
- Boil gari in water, stirring and beating until it thickens.Â
- The texture should be soft and sticky.
- When it has the correct texture, it is then shaped into balls.
- The eba can be dipped in soups and stews to soak up the liquid.
