Island Sun yellow gari are granules made from dried cassava and are traditionally used to make eba, a staple food in Nigeria that is served alongside soups and stews.Â
Yellow gari and white gari are made in the same way, however yellow gari is fried with palm oil (which gives it the colour), and contains more fat than its white alternative.Â
Eba is made in the following way:
- Boil gari in water, stirring and beating until it thickens.Â
- The texture should be soft and sticky.
- When it has the correct texture, it is then shaped into balls.
- The eba can be dipped in soups and stews to soak up the liquid.
The crunchy yellow grains can also be soaked, mixed with cold water and sugar, then eaten as a cereal.
