Pink soba noodles with plum extract are here to brighten up meal times. They’re made with powdered ume, or Japanese plum, to give a subtly sweet-sour plum flavour.
Cook the noodles in boiling water for 4-5 minutes. Then drain and immediately rinse under cold running water to stop them overcooking. Serve with a chilled spicy dressing made from dashi, mirin, soy sauce and Sichuan chilli oil with a splash of cooking sake. Garnish with chopped spring onions and your favourite vegetables. The pink soba noodles with plum extract are great for adding colour to a bento box, too.
