LGM or Lao Gan Ma chilli black bean sauce is a Chinese chilli oil, stirred through with umami rich black beans. The umami rich, savoury sauce brings great depth to braised dishes such as pock-marked woman’s beancurd, stir fries, and is a good condiment with rice dishes or even drizzled over steamed tofu.
