Louis Francois gum arabic is a natural product harvested from the hardened sap of African acacia trees. Gum arabic – also known as acacia gum, char goond or meska – is used as a thickener, emulsifier, marzipan glaze and confectionery glue for holding pieces of sugar work together. The sweet also appears in sweet Moroccan recipes, such as sesame-based sellou or chebakia. Â
Use 5 to 50g per 100g of liquid (or 5% to 50% by weight of liquid). It is more soluble in warmer water.
