These high accuracy scales are essential in the molecular kitchen, as they measure with an accuracy of 0.01g. High accuracy scales, also known as jewellery scales or pocket scales, can be used to precisely measure out small and tiny quantities of ingredients. High accuracy scales are critical when using ingredients such as ice cream stabiliser, pectin, citric acid, xantham gum and other specialist ingredients that transform your dishes.
