Zucchini flower (also known as flor de calabaza) is a key ingredient in Mexican cooking for making quesadillas.Â
The tinned flowers have a delicate, squash-like flavour and a smooth, green skin. To make zucchini (or courgette) flower quesadillas, the blossom is briefly fried with onion, garlic and peppers before being added to a tortilla with cheese and griddled.
The flowers can also be simmered with onion, chilli, root vegetables and stock to make soup.Â
