Sosa NH Fruit Pectin is a pectin ideal for using in spreads and baking.
This is low-methoxyl pectin, which means it needs a little calcium to form a gel. This is in contrast to high-methoxyl pectins which need acid to thicken. Low-methoxyl pectin is good for making low or no-sugar jellies, and are also good with dairy products as they use the calcium to enhance their gelification.
While most people recognise pectin for its use the in the creation of jams, conserves and marmalades, it can also be used to make fruit pastels, foams and shiny glazes for mirror cakes.
