Yuzu is a Japanese citrus fruit. It has strong citrus notes, laced with heady floral, lime blossom aromas. It’s often used in ponzu sauces or yuzu chilli pastes. Yuzu juice is also useful for putting a Japanese twist on citrussy cocktails.
There is no Western equivalent to yuzu juice – so keep a bottle in your fridge for homemade condiments, vinaigrettes, fish marinades, floral-scented granitas and a cheeky cocktail or two. A little goes a long way!
