Organic millet is a small, yellow-hued seed which makes a great alternative to couscous for use in Mediterranean-inspired salads, and as a nutritious base for roasted root vegetables. Although technically a seed, millet cooks like a grain, so works well in place of quinoa as well.Â
Millet has a slightly sweet flavour, and toasting it first brings out nutty undertones. Follow the below instructions for cooking millet:
- Add 1 tbsp of vegetable oil in a pan and heat.
- Add 2 cups of millet and saute until light golden brown.
- Add 2 cups of boiling water and boiling until tender, typically from 15-30 minutes.
Millet can also be used to make porridge, simply blitz the un-cooked grains in a blender until half grain, half flour consistency is achieved, then toast, and use as you would oats.
