Terre Exotique’s barberries are sweet and sour with an acidic tang – a popular ingredient in Persian cooking. The small dried round fruits are similar to dried cranberries, and with a high pectin content, they are a popular choice to use when making jams and jellies.Â
Barberries are widely available where they grow in the highlands – the same area as saffron, and the two are often paired together in dishes. Try using both ingredients to make zereshk polow, a traditional rice dish with spices, nuts and citrus peel. Barberries are also wonderful in semolina cakes and crumbles.
Before using these berries, rinse them then lightly fry in butter.
