Terre Exotique’s Batak berry has heady lemon aromas – the Batak equivalent of Chinese Szechuan berry. Harvested in Indonesia by the Batak people, these berries grow in the zanthoxylum acanthopodium bush and are related to Szechuan berries. Also known as Bataks pepper, these berries are used in a traditional dish of Ikan mas arsik, made with wok-fried carps and a ginger & lemongrass sauce.
For everyday use, dry fry the berries and then crush them in a pestle and mortar. Infuse these berries into butter sauces for lobster and crab, sprinkle over chicken wings, or use to give a citrus burst to rich chocolate ganache.
