Terre Exotique’s Black Sugar From Amami Oshima is a Japanese sugar made from sugar cane. The cane is washed and rinsed, then cold pressed to extract the juice. This juice is then slowly reduced over a wood fire for 5 days – with nothing else added – until it caramelises, then crystallizes into dark nuggets.Â
The hard, dark sugar crystals have a flavour of chocolate and liquorice. Crush it, then use to season fresh fruit salads, or add a dark richly sweet flavour to pastries and creme patisserie.

Terre Exotique works directly with hundreds of specialist farmers and producers around the world – to bring the very best peppers, spices and salts to our tables. The company was founded by Erwann de Kerros, a Breton and seasoned traveller. After tasting pepper in the Penja plantation in Cameroon, Kerros yearned to try other specialist peppers and spices – and Terre Exotique was born.
