Terre Exotique’s sugar from coconut flower is made from the sap of the coconut tree blossom. With a subtle hint of coconut and caramel aroma, it’s the perfect way to sweeten fruit salads, white chocolate cookies and baked custard.

The soft, dark sugar is harvested in Indonesia by hand using traditional methods. The farmers climb coconut trees to harvest the flowers by hand, then collect the sap. The sap is boiled until the water evaporates, leaving the sugar behind. The final stage is to grind the sugar using stones.

With a subtle, not overly sweet flavour, this sugar works well in savoury dishes too. Add a little to tomato sauces and beef ragus.
