Made from green limes that have been soaked in brine and then dried out in the sun, this authentic process is what gives them their subtle fermented taste. The drying process is not as long as black dried limes, which is what allows them to maintain their paler shade, which they can then absorb the colour of the food they are cooked in.Â
Either infuse whole in a Persian Lamb Tagine or in the boiling water with rice, or grind to a powder and use as a rub for meat and vegetable skewers.Â

The company was founded by Erwann de Kerros, a Breton and seasoned traveller. After tasting pepper in the Penja plantation in Cameroon, Kerros yearned to try other specialist peppers and spices – and Terre Exotique was born.
