Green cardamom originally came from the Malabar coast in India and was introduced to North America at the start of the 20th century. With aromas of eucalyptus and flavours of citrus, green cardamom should be ground with a pestle and mortar to release the full flavour.
Once ground, use green cardamom to make Scandinavian spiced buns, mix with coconut milk and lemongrass for a fragrant curry sauce, or pair with poached pears and mascarpone for a simple yet impressive dessert.
