Terre Exotique’s sugar from coconut flower is made from the sap of the coconut tree blossom. It has a subtle hint of coconut and a wonderful caramel aroma. The soft, dark sugar is harvested in Indonesia by hand using traditional methods that have remained unchanged for generations. The farmers climb coconut trees to harvest the flowers by hand, then collect the sap. The sap is boiled until the water evaporates, leaving the sugar behind. The final stage is to grind the sugar using stones.
The flavour of the sugar is soft and subtle – not overly sweet – and a great choice for sweetening creamy desserts, fruit salads or even adding a spoon to ragus and chillies.

The company was founded by Erwann de Kerros, a Breton and seasoned traveller. After tasting pepper in the Penja plantation in Cameroon, Kerros yearned to try other specialist peppers and spices – and Terre Exotique was born.
