Terre Exotique’s sumac powder gives an acidic, citric flavour to Iranian salads and Middle Eastern marinades. Sumac comes from the dried berries of the Rhus Coriaria tree. The red berries are picked by hand in the summer, dried for a month and then ground to a powder, maintaining the burgundy colour.
Tangy, slightly salty and citrusy, sumac powder makes a fantastic alternative to lemon zest in savoury dishes – use it as a dry rub for beef skewers to cut through the fattiness of the meat, sprinkle over hummus, stir a pinch through yogurt and tahini and drizzle over falafels.
