Rainbow tapioca pearls can be used to make sago gula melaka, a Malaysian chilled dessert made by combining cooked tapioca pearls with coconut milk and a palm sugar syrup. The refreshing dessert is rich with coconut milk, and has caramel-like flavours from pandan leaves.Â
Tapioca pearls may also be referred to as sago. Both can be used to make the above dessert, the only difference being that tapioca pearls are made with tapioca (the starch from cassava), while sago is an edible starch that is made from the pith of an array of tropical palm trees. Learn more in our guide to bubble tea.
