Yutaka cooking sake is a fantastic way to season stews and sauces. Use it like a white wine to deglaze pans, or to add a slightly sweet sharpness to slow-cooked recipes. It also works very well in dipping sauces and marinades. Try using it to make nitamago ramen eggs, combined with soy sauce and brown muscovado sugar.
Use cooking sake to make a teriyaki sauce, by mixing two parts of mirin and two parts soy sauce, with one part cooking sake. Mix all the ingredients in a saucepan over a medium heat until combined. This simple teriyaki sauce is ideal for marinades or for brushing over meat and fish.
